Celebrate Anzac Day with a delightful twist on the classic Anzac biscuit – try this irresistible Anzac Day Protein Pancake Stack! Made with our Buttermilk Protein Pancake Mix, rolled oats, desiccated coconut, and a drizzle of golden syrup, these pancakes are the perfect way to indulge while still keeping your nutrition goals on track.

Ingredients

  • 1 cup Buttermilk Protein Pancake Mix
  • 1/2 cup rolled oats

  • 1/2 cup desiccated coconut

  • 1/4 cup golden syrup, plus extra for drizzling

  • 1 cup water (for pancake mix)

  • Butter or coconut oil for cooking

Toppings (optional):

  • Sliced fresh fruit (e.g., bananas or berries)

  • Extra desiccated coconut for garnish

Method / Directions

  1. In a large mixing bowl, combine the Buttermilk Protein Pancake Mix, rolled oats, and desiccated coconut. Mix well to combine.

  2. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to over mix; the batter should be slightly lumpy.

  3. Preheat a non-stick pan over medium heat. Lightly grease the surface with butter or cooking spray.

  4. Pour 1/4 cup of batter onto the pan for each pancake (or pour to whatever size you please!). Cook until bubbles form on the surface and the edges start to look set (about 2-3 minutes). Flip the pancake and cook for another 2 minutes, or until golden brown.

  5. Repeat with the remaining batter, adjusting the heat as needed to prevent burning.

  6. Stack the cooked pancakes on a plate. Top with sliced fresh fruit, a drizzle of golden syrup, and a sprinkle of desiccated coconut for garnish. And enjoy your Anzac Day Protein Pancake Stack!
