Should make about 12 muffins! Packed full of protein and so yummy. This choc protein banana muffin recipe is such a quick and delicious way to whip up a healthy snack for the week. Guilt free snacking!

Ingredients

  • 2 cup Chocolate Protein Pancake Mix
  • 2 large and ripe bananas

  • 1 cup milk

  • 2 extra large eggs

Icing

  • Icing Sugar

  • Cocoa Powder

  • Hot water

Method / Directions

  1. Preheat oven to 180 degrees fan forced and line a cupcake tin with cupcake or muffin cases.

  2. Start by adding your bananas to a mixing bowl and slight mash together. Try and not to mush then too much because we are trying to have little chunks of banana in our muffins.

  3. Add in your milk and eggs and mix all together.

  4. Now add in your pancake mix and stir. The consistency should be a thick texture that you can easily scoop some of the mix into to cases without it spilling (think toothpaste thickness).

  5. Evenly divide the mixture between 12 muffin cases and bake for 15-18mins.

  6. Once cooked, take out of the oven and let cook on a cooling rack (not the muffin tin) and enjoy and a fun little snack that’s packed with lots of protein! 🥞☺️

  7. As an added bonus you can top with a little icing using icing sugar, cocoa and hot water. And an extra slice of banana! 🍌
