Maple Bacon Protein Pancake Tacos! Start your morning off right with this delightful twist on pancakes. Our Maple Bacon flavoured protein pancake mix creates a delicious, high-protein base, while the scrambled eggs, crispy bacon, and drizzle of maple syrup bring a mouth-watering balance of sweet and savoury flavours.

The perfect combination of taste and nutrition, these pancake tacos are sure to become a breakfast favourite for the whole family!

Ingredients

  • 1 cup Maple Bacon Protein Pancake Mix
  • 1 cup of water (or milk) for the pancake mix

  • 6 large eggs, scrambled

  • 6 strips of bacon

  • 1/4 cup of maple syrup

  • Chives to garnish

Method / Directions

  1. In a mixing bowl, whisk together the Maple Bacon Protein Pancake Mix and water (or milk) until smooth.

  2. Preheat a pan over medium heat.

  3. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Set the pancakes aside and keep warm.

  4. In a separate pan, cook the bacon until crispy. Set aside for assembly.

  5. Time to get scramblin’. Scramble the eggs until fully cooked.

  6. To assemble the pancake tacos, place a scoop of scrambled eggs onto each pancake. Then slide in a strip of bacon, top with chives then add a drizzle of maple syrup.

  7. Fold each pancake in half, creating a taco shape. Then devour your Maple Bacon Protein Pancake Tacos!
