Chocolate Peanut Butter Protein Muffins

High Protein Muffin - The Ideal Snack

It should be no surprise to you by now that our mix has a wide range of uses. We've added some special adjustments to make the perfect Peanut Butter Chocolate protein muffin. 

For all the Mum's out there, try popping these in the kids lunch boxes - they're filling & secretly healthy.

Prep Time - 5 minutes

Cook Time - 18 minutes

Serves - 6

Ingredients

  • 2 cups chocolate TPP mix
  • 2/3 cup plain yogurt
  • 1 tsp maple syrup
  • 1/4 cup oil
  • 1/4 cup water
  • 2 eggs
  • 1 tbsp peanut butter
  • 1/2 cup dark choc chips

Toppings 

  • Peanut Butter or your favourite nut spread
  • Cacao nibs

Method / Directions

  1. Start by adding your pancake mix into a large bowl and set aside.protein muffin ingredients
  2. Combine yoghurt, maple syrup, oil, water, eggs and peanut butter in a bowl and mix well.
     
  3. Pour your wet mixture into the dry and combine until you have a smooth cake consistency.

  4. Add the dark choc chips and mix one last time.
  5. Evenly distribute into 8-10 muffin cases.
  6. Bake in the oven at 160°C for 15-18mins and set aside to cool.
  7. Top with your favourite nut spread and cacao nibs for an added crunch.
