Raspberry Biscoff + Protein Yoghurt

Oh you needed topping inspiration? Why didn't you just say so. 

Sometimes it's nice to spice things up, especially when you are sick of just Maple syrup. We're absolutely loving the combo of Raspberries & Biscoff especially with an extra hit of protein with some delicious yoghurt. 

Ingredients

  • 1 cup Buttermilk
  • 1 cup Protein Pancake Mix
  • 1/2 cup Raspberries
  • 1 tablespoon Biscoff Spread
  • 1 Crushed Biscoff Biscuit
  • 1 tsp Cinnamon
  • 1/2 cup Protein Yogurt

Method / Directions

Prepare the Pancake Batter:
In a large mixing bowl, combine the Protein Pancake Mix and Buttermilk. Stir until smooth. Let the batter rest for a few minutes to thicken.

Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat. Pour approximately 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides. Repeat until all pancakes are cooked. Keep pancakes warm.

Assemble the Stacks:

Layering: 

Place one pancake on a serving plate.
Spread a generous layer of Protein Yogurt over the pancake.
Add a layer of Raspberries.
Sprinkle with Crushed Biscoff Biscuit.
Drizzle Biscoff Spread over the top.
Repeat the layering process to create 2-3 layers per stack, ending with some extra protein yoghurt on top.

Add Final Touches:

Sprinkle the top of each stack with Cinnamon for added flavour.
Garnish with additional raspberries and crushed Biscoff biscuit if desired.

Serve:

Enjoy your Protein Pancake Stacks immediately while warm, or refrigerate for later indulgence.
