Ingredients
- 30 g Cinnamon Churro Protein Pancake Mix
- 1 ripe banana
- 2 tbsp vanilla protein powder
- 50 ml egg whites
- 50 g plain Greek yogurt
- 1 tsp baking powder
- 1 tsp ground cinnamon
- splash milk of choice
- drizzle sugar-free maple syrup
- pinch monk fruit sweetener (optional for swirl)
- 1 tbsp protein powder (for glaze)
- water (as needed for glaze)
Instructions
Step 1: Preheat your oven to 165°C (330°F) or air fryer to the same temperature.
Step 2: In a blender, combine the Cinnamon Churro Protein Pancake Mix, banana, 2 tbsp protein powder, milk, egg whites, Greek yogurt, baking powder, and cinnamon. Blend until smooth and creamy.
Step 3: Reserve 2-3 spoonfuls of batter and mix with monk fruit sweetener and a drizzle of sugar-free maple syrup to create your cinnamon swirl mixture.
Step 4: Pour the main batter into a greased ramekin or small baking dish. Use the reserved mixture to create a spiral pattern on top using a spoon or piping bag.
Step 5: Bake for 15 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
Step 6: While baking, make the glaze by mixing 1 tbsp protein powder with water, adding slowly until you reach a thick, pourable consistency.
Step 7: Let cool slightly, then drizzle with the protein glaze and enjoy your warm, fluffy cinnamon bun!
