Chocolate Blueberry Pancakes Recipe

Whip up a delightful breakfast treat with our Chocolate Blueberry Bliss Protein Pancakes! These scrumptious pancakes feature our Chocolate Protein Pancake Mix and are bursting with warm, juicy blueberries transformed into a heavenly compote. Topped with melted chocolate and maple syrup, this sweet and satisfying meal is perfect for a weekend indulgence or a special occasion.

Ingredients

  • 1 cup Chocolate Protein Pancake Mix
  • 1 cup water
  • 1 cup of frozen blueberries

  • 1 tablespoon of sugar (optional)

  • 1/4 cup of dark chocolate, melted

  • 1/4 cup of maple syrup

Method / Directions

  1. Preheat a non-stick pan over medium heat.

  2. In a mixing bowl, whisk together the Chocolate Protein Pancake Mix and water until smooth.

  3. In a small saucepan, heat the frozen blueberries with sugar (if using) over medium-low heat, stirring occasionally until they become a thick, syrupy compote.

  4. Pour 1/4 cup of batter onto the pan for each pancake (or to your preferred size). Cook until bubbles form on the surface, then flip and cook until golden brown. Set the pancakes aside and keep warm.

  5. Melt the dark chocolate in a microwave-safe bowl or over a double boiler.

  6. To serve, stack the pancakes and spoon the warm blueberry compote over the top. Drizzle with melted dark chocolate and maple syrup. Enjoy the Chocolate Blueberry Bliss Protein Pancakes!

Recipe Notes

Optional Extra: For an even more blueberry-packed pancake experience, you can also add blueberries directly into the pancakes while they cook. After pouring the batter onto the pan, gently press a few extra blueberries into the uncooked side of each pancake. Once bubbles form on the surface, flip the pancakes and cook until golden brown. This will give you pancakes with blueberries cooked right into one side, adding an extra burst of fruity flavour!
