Ingredients

  • 1 cup Buttermilk Protein Pancake Mix
  • 1 cup water
  • 1/2 cup of M&M Speckled Eggs, coarsely chopped

  • 1/4 cup of dark chocolate, melted

  • 1/4 cup of maple syrup

Method / Directions

  1. In a mixing bowl, whisk together the Buttermilk Protein Pancake Mix and water until smooth.

  2. Gently fold in the chopped M&M Speckled Eggs.

  3. Pour 1/4 cup of batter for each pancake (or choose your size) onto a pan at medium heat. Cook until bubbles form on the surface, then flip and cook until golden brown. Set the pancakes aside and keep warm.

  4. Melt the dark chocolate in a microwave-safe bowl or over a double boiler.

  5. To serve, stack the pancakes and drizzle with melted dark chocolate and maple syrup. Dig in and enjoy the festive Easter Surprise Protein Pancakes!
