Ingredients
- 1 ripe banana (the riper the better — more natural sweetness)
- 1/2 cup blueberries (fresh or frozen both work)
- 1 egg
- 2 tbsp Buttermilk Protein Pancake Mix
- 1/4 tsp baking powder
- 2 tbsp Greek yoghurt (to serve)

Instructions
Step 1: In a bowl, mash the banana well with a fork until smooth and creamy — no big lumps.
Step 2: Add the egg, Buttermilk Protein Pancake Mix, and baking powder. Mix until a thick batter forms, then gently fold in the blueberries.
Step 3: Heat a non-stick pan over medium-low heat and lightly grease with cooking spray or a small knob of butter.
Step 4: Pour small rounds of batter into the pan (about 2–3 tbsp each). Cook for 2–3 minutes until bubbles form on the surface and the edges look set.
Step 5: Flip carefully and cook for another 1–2 minutes until golden. Repeat with remaining batter.
Step 6: Stack and serve topped with a dollop of Greek yoghurt and any extra blueberries.
💡 Tips
Pro tip: keep the heat on medium-low — banana-based pancakes can brown quickly on the outside while still being raw in the middle. Low and slow is the move here!
