Gingerbread Protein Pancakes with Gingercream Sauce Recipe

These should be a Christmas essential! Super easy and so so tasty. Kids will love these & a good way to get some extra protein in around a season of treats. Plus, a great way to add a Christmas twist to our protein pancake mix.

Ingredients

Gingercream Sauce 

  • ¼ cup thickened cream (or canned coconut cream for dairy-free)
  • 1 tbsp maple syrup
  • ½ tsp ground ginger
  • Pinch cinnamon
  • Tiny pinch ground cloves
  • ¼ tsp vanilla extract

 

Method / Directions

  1. Mix the pancake mix, ground ginger, cinnamon & ground cloves with water until you have a smooth consistent batter. 
  2. Then take to the pan, flip up a stack of these delicious cinnamony, gingery pancakes. 
  3. At the same time, bring a small saucepan to a low heat and add the sauce ingredients. Stir until heated, well combined & slightly thickened. 
  4. Pour sauce all over your stack of pancakes - try to share!
