Ingredients
- 1 ripe banana (mashed)
- 2 eggs
- 2 cups Buttermilk Protein Pancake Mix
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 cup almond milk
- sliced banana (for topping)
- fresh or frozen berries (for topping)

Instructions
Step 1: Preheat oven to 180°C (350°F) and line a large baking sheet with parchment paper or lightly grease it.
Step 2: In a large bowl, mash the banana until smooth. Add eggs and whisk together until well combined.
Step 3: Add the Buttermilk Protein Pancake Mix, baking powder, and cinnamon to the bowl. Pour in the almond milk and mix until you have a smooth, thick batter.
Step 4: Pour the batter onto the prepared baking sheet and spread evenly using a spatula to create an even layer about 1cm thick.
Step 5: Arrange banana slices and berries on top of the batter, gently pressing them in slightly.
Step 6: Bake for 35-40 minutes, or until the pancake is golden brown and a toothpick inserted in the center comes out clean.
Step 7: Let cool for 5 minutes, then slice into 4 large rectangles or 6 smaller squares and serve warm with Greek yoghurt, extra berries and maple syrup.
