Prep Time – 3 minutes
Cook Time – 25–30 min or 3–4 minutes

Ingredients

Frosting:

  • 1 tbsp Greek yogurt
  • 1 tsp cream cheese
  • Sweetener + vanilla extract

Toppings:

  • Grated carrots, pecans & raisins

Method / Directions

 

  1. Mix all pancake ingredients in a bowl.
  2. Fold in carrots + pecans.
  3. Microwave ~90 sec or bake at 180°C for ~15 min.
  4. Mix frosting & spread on top.
  5. Add toppings & enjoy warm (or pre-make them and use them as meal prep bowls!!)
