Chocolate Chip Protein Muffin Recipe

We've been working on bringing you more ways to 'flip' recently. These protein muffins are super easy to make & make the perfect meal prep snack, or snack for kids lunch boxes! This recipe uses our Maple flavoured protein pancake mix, but any of our flavoured mixes will do. 🧁

Prep Time - 3 minutes

Cook Time - 18-25 minutes

Serves - 8 muffins

Ingredients

  • 1 cup of Maple flavoured Protein Pancake Mix
  • 2 tsp stevia or sweetener of choice
  • 1 tsp baking powder
  • ¾ cup milk of choice (I used almond milk)
  • ¼ cup sugar free chocolate chips (to fold in)

Optional: pinch of cinnamon or nutmeg

✅ Higher protein option: try adding some of the milk for Greek Yoghurt, Cottage Cheese or an Egg! For example; replace ¼ cup of milk for ¾ cup of Greek yoghurt.

 

Method / Directions

  1. Preheat oven to 180°C. Line or grease a muffin tray for 8 muffins.
  2. In a bowl, mix the pancake mix, sweetener, and baking powder.
  3. Add the milk and stir until a smooth batter forms.
  4. Fold in the mini chocolate chips.
  5. Divide batter evenly into the muffin tray and bake for 18-25 minutes, or until a toothpick comes out clean.
  6. Let cool and enjoy (try not to eat all in one sitting)! 😉
