Using our Cinnamon Churro protein pancake mix we have whipped up some cinnamon swirl protein pancakes with a touch extra sweetness, cinnamon & some almond butter. Perfect weekend pancake stack.

Pancake Stack
- 1/2 cup Cinnamon Churro Protein Pancake Mix
- 1/2 cup of water
Cinnamon Swirl
- 1/4 cup of protein pancake mix
- 2 tsp almond butter
- 2 tsp cinnamon
- 2 tsp monk fruit sweetener
Frosting
- 1/4 cup Greek yogurt (for two servings)
- Splash of vanilla extract (to taste)
- Tbsp of protein pancake mix or protein powder

Method / Directions
1 - Prepare the Pancake Batter:
In a bowl, combine 1/2 cup of Cinnamon Churro Protein Pancake Mix with 1/2 cup of water. Mix until smooth, but avoid overmixing to keep the pancakes fluffy.
Set aside.
2 - Make the Cinnamon Swirl
In a separate bowl, mix 1/4 cup of protein pancake mix, 2 tsp almond butter, 2 tsp cinnamon, and 2 tsp monk fruit sweetener. Stir until well combined into a thick swirl mixture.
3 - Cook the Pancakes
Heat a non-stick pancake pan or griddle like The Pancake Pan
Pour the pancake batter into the pancake pan, forming one or two pancakes depending on the size you prefer.
Once bubbles form on the surface of the pancakes and the edges begin to set (about 2-3 minutes), swirl the cinnamon mixture over the top of each pancake in a spiral pattern.
4 - Prepare the frosting
In a small bowl, combine 1/4 cup of Greek yogurt, a splash of vanilla extract, and 1 tbsp of protein pancake mix or protein powder. Stir until smooth and creamy.
5 - Serve
Stack the pancakes on a plate and drizzle with the prepared frosting. You can also add any extra toppings like a drizzle of maple syrup, fresh fruit, or a sprinkle of cinnamon if desired.
