Gingerbread Pancakes

These should be a Christmas essential! Super easy and so so tasty. I devoured the whole stack of pancakes and still wanted more. A great way to add a Christmas twist to our Buttermilk pancake mix.

Recipes

Here’s what you need to know…

1/4 cup measurement equals one protein pancake. Need just the one pancake? 1/4 cup mix + 1/4 cup (60ml) of water will do the trick. Feeling extra hungry? You’ll need 1/2 cup + 1/2 cup of water. You get the idea, smarty pants. 🤓

Ingredients required:

  • The Protein Pancake mix (duhhh)
  • Water (or milk also works well)
  • Butter or Coconut oil (for greasing the pan)

01

Step 1

🥞 Choose your desired number of pancakes, or as we like to call it, your stack size. Add 1/4 cup of The Protein Pancake mixture to a mixing bowl per pancake. 👨‍🍳

02

Step 2

Measure out 1/4 cup (approximately 60ml) of water per pancake and add this to the mixing bowl with the dry mix. We suggest adding the water slowly to check that you have the best batter consistency possible. 🥞

03

Step 3

Stir the mixture until well combined. No need to over mix the batter as small chunks are okay and will come out in the cooking process.

🔥 Hot tip: the ultimate stirring tool is a silicone spatula.

04

Step 4

Time to bring the heat. Use an appropriately sized pan over a medium heat. Allow the pan to heat up evenly. Then add butter or your choice of pan greaser.

🔥 Hot tip: for a healthier option coconut oil serves as a good replacement for butter.

05

Step 5

Pour in your mixture and cook until small bubbles begin to appear. Then using a thin, wide spatula flip the pancake and continue cooking the second side until golden brown.

🔥 Hot tip: the delicate art of pancake flipping. The pancake should have a reasonable coverage of small bubbles to ensure adequate cooking before the flip.

Time to feast! 🍽

Remove from the pan and stack them up! Add your favourite ingredients and enjoy. 🤤🥞
