Instructions
Step 1: Preheat your oven to 180°C (350°F) if using the oven method.
Step 2: In an oven-safe or microwave-safe bowl, whisk together the pancake mix, protein powder, and baking powder.
Step 3: Add the Greek yogurt, egg, and almond milk, mixing until you have a smooth batter.
Step 4: Gently fold in the blueberries, being careful not to burst them.
Step 5: For oven method: Bake for 25-30 minutes until the top is golden and set. For microwave method: Cook on high for 3-4 minutes, checking every minute after the 2-minute mark.
Step 6: Let cool for 2-3 minutes, then drizzle with sugar-free maple syrup and enjoy straight from the bowl!
