Sometimes simple is best... pancakes with fruit is just hard to beat. A high-protein brekky that tastes like dessert... fluffy chocolate pancakes loaded with banana, chocolate chips, fresh berries and creamy yoghurt.

Ingredients
- 1 cup Chocolate Protein Pancake Mix
- 3/4 cup water (up to 1 cup depending on desired batter thickness)
- 1 egg (optional)
- 1 ripe banana, mashed (optional)
- 2 tbsp chocolate chips (plus extra to top)
- 3 tbsp yoghurt of your choice (Greek, coconut or flavoured all work great)
- 30 g fresh raspberries
- 30 g fresh blueberries

Instructions
Step 1: Add the Chocolate Protein Pancake Mix to a large mixing bowl. Crack in the egg and mash in the banana, mixing to combine.
Step 2: Pour in the water a little at a time, stirring as you go, until you have a smooth, thick batter. Start with ¾ cup and add more if needed, you want it pourable but not runny.
Step 3: Fold the chocolate chips through the batter gently so they're evenly distributed.
Step 4: Heat a non-stick pan over medium heat and lightly grease with butter or cooking spray.
Step 5: Pour batter into the pan to form pancakes of your preferred size. Cook for 2–3 minutes until bubbles appear on the surface and the edges look set, then flip and cook for a further 1–2 minutes until golden.
Step 6: Stack the pancakes with layers of yoghurt between each one, then pile on the raspberries, blueberries and a few extra chocolate chips to finish.
💡 Tips
You can also swap the water for milk for an even richer, fluffier result. The egg is optional for extra protein! Want to make it even easier? Just leave out the banana & egg.
