Ingredients
- 1/2 cup Buttermilk Protein Pancake Mix
- 15 g protein powder of choice (vanilla works great)
- 1/2 tsp baking powder
- 2 tbsp Greek yoghurt (≈ 30g)
- 1 egg
- 1/3 cup almond milk (or milk of choice)
- 1 tsp stevia (or sweetener of choice)
- 1 tsp cocoa powder (for Dubai Chocolate version only)
- — RASPBERRY MUFFIN TOPPINGS —
- 1 tsp peanut butter
- 30 g fresh raspberries
- 1 tbsp white chocolate chips
- — DUBAI CHOCOLATE TOPPINGS —
- 1 tsp pistachio butter
- 30 g strawberries, sliced
- 1 tbsp chocolate chips

Instructions
Step 1: In a bowl, whisk together the Buttermilk Protein Pancake Mix, protein powder, baking powder, Greek yoghurt, egg, almond milk and stevia until you get a smooth, thick batter. For the Dubai Chocolate version, stir in the cocoa powder at this stage - or once it's in the glass container.
You can either do one big batch of the mix or you can mix them in the actual glass containers themselves!
Step 2: Pour the batter evenly into two square microwave / oven safe glass containers.
Step 3: For the Raspberry Muffin Bowl, top with a drizzle of peanut butter, a handful of fresh raspberries and a scatter of white chocolate chips.
Step 4: For the Dubai Chocolate Bowl, top with pistachio butter, sliced strawberries and chocolate chips. Serve immediately and enjoy!
Step 5: Bake at 180°C (350°F) for 25–30 minutes or until set. (you can microwave these but the oven is worth it if you have time)
