This is the ultimate "lazy Sunday" hack that actually tastes incredible! Might be my new favourite scrambled pancake hack. Same fluffy pancake flavour, none of the standing around waiting to flip. If you're impatient (like me) or cooking for kids, this is elite.

Ingredients
- 1/2 cup Buttermilk Protein Pancake Mix
- 1/2 cup Water
- 1/2 cup fresh strawberries, sliced
- 2 serves Sugar-Free Maple Flavoured Syrup
- 1 tsp Butter (or cooking oil)
Instructions
- Step 1: Prep: In a small bowl, whisk the Buttermilk mix and water until just combined.
- Step 2: Heat: Lightly grease a non-stick pan with spray or butter over medium-low heat.
- Step 3: Pour: Pour the entire batter into the pan as if you were making one giant pancake.
- Step 4: Scramble: Once bubbles start to appear on the surface, use your spatula to gently break and stir the batter, just like you would with scrambled eggs.
- Step 5: Serve: Toss into a bowl, top with fresh strawberries, and drench in sugar-free maple syrup.
💡 Tips
Caramelise: Let the pieces sit for 30 seconds between stirs so they get those golden, crispy edges.
