Ingredients
- 1/2 cup Buttermilk Protein Pancake Mix
- 1/2 cup Water
- 1/2 cup brewed or instant coffee (cooled, for soaking)
- 1/3 cup low-fat Greek yogurt (cream layer)
- 10 grams vanilla protein powder (cream layer)
- 1 tsp stevia or sweetener (cream layer)
- 1 splash vanilla extract (cream layer)
- 1 tsp cacao powder (dusting)
Instructions
- Step 1: Cook Pancakes: Whisk the Buttermilk mix and water until smooth. Cook as 3-4 medium pancakes in a non-stick pan over medium heat until bubbles appear, then flip until golden.
- Step 2: Make Cream: In a small bowl, whisk together the Greek yogurt, protein powder, sweetener, and vanilla extract until thick and smooth.
- Step 3: The Soak: Quickly dip each warm pancake into the brewed coffee. Don't let them sit too long - you want them infused, not soggy!
- Step 4: Assemble: Place one coffee-soaked pancake on a plate, spread with a layer of the protein cream, and repeat until you have a stack.
- Step 5: Finish: Dust the top generously with cacao powder. Serve immediately!
💡 Tips
The Zero-Soggy Rule: Use cold brewed coffee for dipping. If the coffee is boiling hot, the pancakes will fall apart. A quick "1-2 second" dunk is all you need!
