Method / Directions

In a large mixing bowl, combine the Buttermilk Protein Pancake Mix, rolled oats, and desiccated coconut. Mix well to combine.

Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to over mix; the batter should be slightly lumpy.

Preheat a non-stick pan over medium heat. Lightly grease the surface with butter or cooking spray.

Pour 1/4 cup of batter onto the pan for each pancake (or pour to whatever size you please!). Cook until bubbles form on the surface and the edges start to look set (about 2-3 minutes). Flip the pancake and cook for another 2 minutes, or until golden brown.
