Fast, fluffy and delicious classic pancakes, topped with fresh fruit and Greek yoghurt. Healthy pancakes should be simple, so these will be ready in 5 minutes. This is probably the most popular topping we see other people using, so just a reminder to stick with the basics - they work, are super tasty and good for you!Ā Ā 

P.s. I say 5 minutes but I now made these pancakes more times than I can count so I'm a ninja on the spatula 🄓

Ingredients

  • 1/2 cupĀ Maple Protein Pancake MixĀ Need it Gluten Free? Use our Gluten Free Buttermilk Protein Pancake Mix
  • 1/2 cup milk of choice (almond, soy, dairy — you do you) - or water. Pro tip: add a bit less milk / water to get your batter extra thick, for super fluffy pancakes (if you like them like that)Ā 
  • 2 heaped tablespoons (ā‰ˆ 60 g) of Greek Yoghurt
  • A handful of raspberries (30-40g)
  • A handful of blueberries (30-40g)

Method / Directions

  • In a bowl, add the pancake mix and milk (or water).
  • Mix until you get a thick, pourable batter.
  • Heat a non-stick pan over medium heat and lightly grease it.
  • Pour batter to form small pancakes. Cook for 2–3 mins per side, or until golden and fluffy.
  • Stack ’em up with fresh fruit, Greek yogurt and a drizzle of honey or maple syrup.
