Carrot Cake Protein Pancake Recipe

A delicious twist on our Maple flavoured protein pancake mix. These fluffy pancakes are packed with protein and spiced just right for that classic carrot cake vibe. Topped with a creamy yogurt frosting, grated carrot, crunchy pecans, and a drizzle of sugar-free maple syrup — they’re the perfect high-protein treat for any time of day!

Ingredients

Optional: pinch of cinnamon or nutmeg for that carrot cake vibe

Frosting:

  • 1/4 cup Greek yogurt
  • 1 tsp low-fat cream cheese
  • Dash of vanilla extract
  • 1 tsp monk fruit sweetener

Toppings:

  • Grated carrot 🥕
  • Chopped pecans
  • A drizzle of sugar-free maple syrup 🍁

 

Method / Directions

  1. Mix the pancake mix, egg, almond milk, and monk fruit sweetener in a bowl.
  2. Pour onto a hot non-stick frying pan and cook until golden on both sides.
  3. In a small bowl, mix the Greek yogurt, cream cheese, vanilla, and monk fruit to make the frosting.
  4. Stack your pancakes, top with frosting, shredded carrot, pecans, and a maple drizzle.
