Protein Pancake Bowls 2 Ways | High Protein Breakfast Recipe

Ingredients

  • 1/2 cup Buttermilk Protein Pancake Mix (per bowl)
  • 10 g vanilla protein powder (per bowl)
  • 1 tsp stevia or monk fruit sweetener (per bowl)
  • 1/2 tsp baking powder (per bowl)
  • 2 tbsp Greek yoghurt (per bowl)
  • 1/3 cup almond milk (per bowl)

  • 1/2 banana, sliced
  • 1 tbsp chocolate chips
  • — BERRY WHITE CHOC BOWL —
  • 30 g blueberries
  • 30 g raspberries
  • 1 tbsp white chocolate chips

Instructions

Step 1: Preheat your oven to 180°C (350°F) if baking, or skip ahead if you're going the microwave route. The oven is defs worth it if you have the time!
Step 2: In a bowl, whisk together the Buttermilk Protein Pancake Mix, vanilla protein powder, stevia, and baking powder until combined.
Step 3: Add the Greek yoghurt and almond milk, then mix until you get a smooth, thick batter — a few small lumps are fine.
Step 4: Pour the batter into two oven-safe ramekins or microwave-safe bowls, filling each about two-thirds of the way up.
Step 5: Add your toppings: load one bowl with banana slices and chocolate chips, and the other with blueberries, raspberries, and white chocolate chips.
Step 6: To bake: place in the oven for 20–25 minutes, until the tops are golden and the centre is set. To microwave: cook on high for 2–3 minutes, checking at the 2-minute mark — the top should look just set.
Step 7: Let the bowls cool for a minute or two before eating. Store any leftovers in the fridge for up to 4 days.

💡 Tips

Pro tip: these bowls are brilliant for meal prep - make a double batch, refrigerate, and reheat in the microwave for 60–90 seconds each morning. Swap the toppings based on what's in season or whatever's in the fridge.
