Ingredients
- 1/2 cup Buttermilk Protein Pancake Mix
- 1 egg
- 1/2-3/4 cup almond milk or water
- 1 tsp stevia or monk fruit sweetener
- 1/2 cup Greek yoghurt
- 1/2 tsp vanilla extract
- 1 apple, chopped
- 1 tsp ground cinnamon
- 1 tbsp brown sugar
- 2 tbsp maple syrup
- 2 tbsp water
Instructions
Step 1: In a bowl, whisk together the pancake mix, egg, almond milk, and sweetener until smooth. The batter should be thin and pourable - add more liquid if needed.
Step 2: Mix the Greek yoghurt with vanilla extract in a small bowl and set aside.
Step 3: Heat a non-stick pan over medium-low heat and lightly grease. Pour a thin layer of batter, swirling to cover the pan. Cook for 1-2 minutes until set, then flip and cook 30 seconds more. Repeat to make 4 crepes.
Step 4: In the same pan, add chopped apple, cinnamon, brown sugar, maple syrup and water. Cook for 5-7 minutes, stirring occasionally, until apples are soft and caramelized.
Step 5: To serve, spread yoghurt mixture down the center of each crepe, top with warm apple mixture, then fold or roll up.
💡 Tips
Pro tip: Keep crepes warm by stacking them on a plate covered with a damp tea towel while you cook the apple topping.
