Ingredients

  • 3 cups Cinnamon Churro Protein Pancake Mix
  • 3 cups milk of choice or water
  • 1 tsp baking powder (optional for extra fluffiness)
  • 1/4 cup Greek yoghurt or thickened cream
  • 1 cup strawberries, sliced
  • 1 banana, sliced
  • 1/2 cup blueberries

Instructions

Step 1: Preheat your oven to 180°C (350°F) and grease a large rectangular baking tray or dish.
Step 2: In a large bowl, combine the Cinnamon Churro Protein Pancake Mix with milk (or water) as per packet directions for 6 serves. Whisk in baking powder if using.
Step 3: Pour the pancake batter evenly into your prepared tray, spreading it out to the corners.
Step 4: Divide the tray into thirds and arrange your toppings: yoghurt and strawberries on one third, banana slices on another, and blueberries on the final third.
Step 5: Bake for 15-20 minutes until golden brown and a toothpick inserted in the centre comes out clean.
Step 6: Let cool for 5 minutes before slicing into squares and serving.

💡 Tips

Pro tip: grease your tray or line your tray with baking paper for easy removal and cleanup. You can prep this the night before and bake fresh in the morning!
