Ingredients
- 1/2 cup Buttermilk Protein Pancake Mix
- 1/2 cup water
- 1 fresh peach, sliced into rings with pit removed (about 4–5 rings)
- maple syrup, to serve

Instructions
Step 1: In a bowl, combine the Buttermilk Protein Pancake Mix and water. Mix until you get a smooth, thick batter.
Step 2: Slice your peach horizontally into rings about 1cm thick and carefully remove the pit from the centre of each ring.
Step 3: Heat a non-stick pan over medium heat and lightly grease with butter or cooking spray.
Step 4: Dip each peach ring into the batter, letting any excess drip off, then place gently into the pan.
Step 5: Cook for 2–3 minutes per side until the batter is golden and cooked through. Work in batches if needed.
Step 6: Stack 'em up and drizzle with maple syrup to serve.
💡 Tips
Pro tip: use a slightly firmer peach so the rings hold their shape during cooking - if your peach is very ripe, pop it in the fridge for 20 minutes first to firm up. You can also swap the water for milk for an even richer batter.
