This is potentially the most epic dessert idea we've ever posted! The possibilities are endless once you nail this base recipe, you could swap out the ingredients, make a Chocolate version with berries and or meal prep several 'cakes' at once.Ā

Ingredients

Base

Apple compote

  • 80g chopped or grated apple
  • 10g chopped raisins
  • Water as neededĀ 

Salted caramel creamĀ 

  • 100g salted caramel protein yoghurt
  • 1 tsp (3.5g) unflavoured gelatin
  • 2 tbsp waterĀ 

Almond ganacheĀ 

  • 10g almond butter
  • 1-2 tsp monk fruit sweetener or preferred sweetener
  • CinnamonĀ

Method / Directions

Step 1

Pancake base: in a small bowl add protein pancake and water. Gently stir the mixture until combined. Avoid overmixing the batter for fluffy results. Cook on a lightly greased pan over medium heat until bubbles appear and the pancake is lightly golden, then flip. Press the pancake into a greased 10cm springform pan.

Step 2

Apple compote: In a saucepan, cook your apple mixture until softened, adding water as needed. Top the mixture over the pancake base and press down evenly.

Step 3

Salted caramel cream: In a bowl, mix yogurt with *hydrated gelatin until combined. Top the cream over the apple compote layer. Transfer to the freezer for a quick 20-minute set or the fridge for an hour until firm.

Step 4

Almond ganache: Mix almond butter with water and sweetener to taste until you get a spreadable consistency, then top over the set cake.

Step 5

Serve: Drizzle with maple syrup before serving. Enjoy!

*hydrated Gelatin: in a small cup, mix Gelatin with water and let it sit few minutes to absorb the liquid and swell. After hydration melt it over a bowl of hot water or 20 sec in microwaveĀ
